cooking misadventures cont’d part II
As of the last update I’ve still been cooking (albeit a brief spell of constant restauranteuring). Of note, I’ve made salmon & potato croquettes, green curry with eggplant & chicken, and mochi
salmon & potato croquettes
- turned out very well, delicious served with mayonaise and ketchup and a sprinkle of salt on top
- mashing potatoes without anything decent to mash with is way too much effort
- because of ^, there were small chunks of potato in the croquette (which I actually found to be quite nice, the croquettes had a lovely texture). hooray for delicious accidents
- (note to self) potatoes need to be boiled longer
green curry with eggplant & chicken
- also turned out excellent, might be a bit hot for some, but it was just right for me
- I need to ease off on the ginger
- mmmm eggplant in curry is sooooooo good
- next time I’d like to make a curry that leans towards mellower and richer rather than spicier (more coconut milk? there can never be enough coconut milk)
mochi
- so I made mochi with the intent of wrapping it around ice cream but it’s such a pain in the ass to work with I gave up
